Extensive conversion of a bakery

About

The house dates from the late 19th century and comprises a bakery on the ground floor and accommodation upstairs. Unoccupied for many years, the premises are insalubrious and require extensive conversion to meet current hygiene standards.

The project is built around showcasing the products and practices of the baker. An entrance hall shared by the shop and the accommodation provides a large display window for the breads. Between the shop and the workshop, a large sliding glass window allows customers to observe the activity in the workshop.

The palette of materials is limited and immaterial (bronze anodised aluminium, glass, mirrors), highlighting the beauty and authenticity of the breads produced at Sam.
